These little balls of deliciousness are so crispy and juicy…and not the kind of juicy you think after being deep fried…they are not oily but frying the spinach from frozen means that it preserves all it’s spinach water which is not only delicious and but also nutritious. I used the frozen chopped spinach from Sainsbury’s which comes in frozen nuggets. If not freeze your own in an ice cube tray perhaps.
Preparation time: 30 minutes
Ingredients (Serves 2):
12 nuggets of “Chopped Frozen Spinach” from Sainsbury’s…or make your own
2 cups Gram Flour
1cm cube of fresh peeled ginger
2 tbsp fresh Tarragon Leaves
1/2 tsp Ajwain seeds
1/2 tsp Mustard seeds
1/2 tsp Coriander Cumin powder
1/2 tsp Turmeric
3/4 tsp Red Chilli powder
3/4 tsp Salt
1 tbsp Lemon Juice
Water
Olive Oil (for frying)
Method:
Preheat the oven to 160 degrees celsius
Grind the ginger and tarragon leaves
Mix the ground ginger mix to the flour, all the powdered spices and seeds, and the salt and lemon juice…mix well
Slowly add cold water tablespoon at a time until you end up with a thick batter that easily coats a spoon
Drop the spinach nuggets into the batter from frozen and mix well until all coated
Heat 2 cm worth of olive oil in a frying pan until batter sizzles when dropped in as a tester
Fry the battered nuggets off until a dark golden colour in batches and drain excess oil onto a paper towel
Place the nuggets onto an oven tray and pop into the oven for 15 minutes to ensure a hot centre and to release any oil
