These brownies are the most, gooey heavenly things I beleive I have made! Before inventing these I had never come across a Vegan Brownie that did not taste “healthy”….lets be honest, when you make brownies you want to indulge and be naughty, which is exactly what these let you do!
Preparation time: 1 hour (including cooking and cooling times)
Ingredients (Makes 8 pieces):
- 4 small Sweet Potatoes
- 16 Medjool Dates
- 2 tbsp Tahini
- 2/3 cup Almond Flour
- 1/2 cup Gluten Free Flour
- 1 Banana
- 1 1/2 cups Raw Cacao
- 3 tbsp Maple Syrup
- Salt
- 6 Bing Cherries
Method:
- Heat the oven to 180 degrees celsius
- Place the sweet potatoes in a caserole dish with a lid with 1cm of water and cook in the microwave for 6 minutes
- Cool the potatoes and peel the skin off
- Place the dates and potatoes in a blender until it forms a smooth mixture
- Add all the other ingredients (minus the cherries) and blend until everything is well mixed and dough has formed
- Lightly grease a loaf tin and paper it
- Press the dough into the tin
- Cut and stone the cherries and press them onto the surface of the brownies
- Cook in the oven for 20 minites
- Cool in the tin for 10 minutes
- Remove from the tin and cut into squares
