Anya Potatoes with Greek Basil, Crispy Spring Onion and Chilli

I went to the supermarket yesterday and made two amazing new finds…Anya potatoes and Greek basil! The Anya potatoes are great because they are waxy and creamy, and the Greek Basil is so refreshing and tastes like a mix between basil and mint! This dish is delicious!


Preparation time: 40 minutes (including cooking time)


Ingredients (Serves 4):

  • 750g Anya Potatoes
  • 4 cups Greek Basil chopped roughly
  • 6 Spring Onions diced roughly
  • 3 Thai Red Chillies chopped finely
  • 5 tbsp Olive Oil
  • Salt

 


Method:

  1. Boil the potatoes in salted boiling water for 20 minutes or until a knife can pierce them with ease
  2. Drain the potatoes
  3. Heat the oil in a frying pan (use a large surface area pan for optimal potato colouring)
  4.  Add chillies to the oil and let them sizzle
  5. Add the spring onions and cook on high heat for 2-3 minutes until crispy but not burnt
  6. Add the potatoes and toss on high heat and add a generous pinch of salt
  7. Cook for a further 15 minutes until the potatoes become golden
  8. Turn the heat off and toss through the Greek basil
  9. Enjoy my Little Peas!
