This is the best Autumn treat and perfect for a family-style meal.
Preparation time: 1 hour 20 minutes (including cooking time)
Ingredients (serves 4):
- 4 munchkin pumpkins
- 8 sprigs of lemon thyme
- 12 basil leaves
- 4 garlic cloves
- Pepper
- Salt
- Kalamata virgin olive oil
Method:
- Clean munchkin pumpkins with a wet towel
- Preheat oven at 200 degrees celcius
- Slice the top off your pumpkins two inches from the top to create a lid
- Scoop the seeds and stringy bits and bobs out and discard
- Chop the garlic cloves and basil finely, and split evenly into the cavities of the four pumpkins
- Add a large pinch of salt and pepper and c. 1 tbsp of olive oil into each cavity
- Add two sprigs of lemon thyme into each pumpkin, and pop its hat back on
- Place the pumpkins in the oven to cook for 50-60 minutes
- Once you have removed from the oven, use a large spoon to scrape the soft pumpkin flesh away from the shell and smash together with the seasonings you added earlier
