Creamy Mash Potato with Smoked Chilli, Chives and Spring Onion


These potatoes are the most comforting thing to dig into…eating them is like getting a big warm cuddle! The smoked chillies really add a punch and any herbs you like are welcome to join this potato party…I chose chives and spring onions!

Preparation time: 1 hour (including cooking time)

Ingredients (Serves 3):

  • 3 kg Jersey Potatoes (preferably mud still on, with thin skin)
  • 5 Spring Onions
  • 2 large Wax Banana Chillies (or another medium heat chilli)
  • 1/4 cup Chives
  • 2 tbsp Olive Oil
  • Salt
  • Pepper
  • Oregano (optional)


  1. Clean and boil the potatoes in salted water until a knife can easily pierce the centre of the potatoes (approx. 20 minutes)
  2. Using a gas cooker or a flame hold the chillies with cooking tongs and scorch their skin until completely blackened and then pluck of the stem
  3. Place the chillies, potatoes, chives, oregano, olive oil, salt and peoper (to taste) in a blender and blend until smooth and creamy
  4. Heat the spring onions, finely chopped, in a dry hot pan for a couple of seconds
  5. Pulse the spring onions through the mash
  6. Enjoy
