These potatoes are the most comforting thing to dig into…eating them is like getting a big warm cuddle! The smoked chillies really add a punch and any herbs you like are welcome to join this potato party…I chose chives and spring onions!
Preparation time: 1 hour (including cooking time)
Ingredients (Serves 3):
- 3 kg Jersey Potatoes (preferably mud still on, with thin skin)
- 5 Spring Onions
- 2 large Wax Banana Chillies (or another medium heat chilli)
- 1/4 cup Chives
- 2 tbsp Olive Oil
- Salt
- Pepper
- Oregano (optional)
Method:
- Clean and boil the potatoes in salted water until a knife can easily pierce the centre of the potatoes (approx. 20 minutes)
- Using a gas cooker or a flame hold the chillies with cooking tongs and scorch their skin until completely blackened and then pluck of the stem
- Place the chillies, potatoes, chives, oregano, olive oil, salt and peoper (to taste) in a blender and blend until smooth and creamy
- Heat the spring onions, finely chopped, in a dry hot pan for a couple of seconds
- Pulse the spring onions through the mash
- Enjoy
