Overnight Vegan Crumpets (served with my homemade Quince Jam)


I love crumpets! These crumpets are extra soft, airy and fluffy because I leave my batter to rise and rest in the fridge overnight…and making the batter the night before literally takes minutes! It means you can wake up and make the crumpets for your breakfast with jam (I have quinces growing in my garden and so we have quince jam)! I use oat milk (favourite brand is Oatly) but any plant-based milk will work well!


Duration: 15 minutes (night before), 12 hours resting time (in fridge), 20 minutes (to cook)

Ingredients (Makes 6 Crumpets):

  • 225g Organic Strong Bread Flour
  • 1/2 tsp Salt
  • 1/2 tsp Sugar (Cane sugar if accessible)
  • 1 tsp Dry Active Yeast
  • 150 ml Oat Milk (brand of choice is Oatly)
  • 150ml Water
  • 1/4 tsp Bicarbonate of Soda
  • Olive Oil (to cook)

(Need a non-stick baking ring or shape to pour batter into on the pan)


  1. Mix the flour, salt, sugar and dried yeast in a bowl and make a well in the centre
  2. Heat the milk and water together in a pan until just warm (not boiling)
  3. Pour the milk and water into the well and whisk well until the batter forms a thick cream-like texture
  4. Cover the bowl with cling film and leave in the fridge overnight (at least 10 hours)
  5. The next morning, remove the batter from the fridge (it should have become very aerated)
  6. Add the bicarbonate of soda and fold in (try and not mix for too long)
  7. Heat a non-stick frying pan and grease with olive oil using a tissue
  8. Grease your mould (I used heart shaped ones)
  9. Place the mould onto the pan and allow to heat up on medium heat
  10. Pour the batter into the mould until about 3cm high and allow to cook on a medium heat
  11. When the top surface has been bubbling and the bubbles start to hold around the edges, run a sharp knife around the edges of the crumpet and lift the mould off
  12. Flip the crumpet and cook on the other side for 1-2 minutes
  13. Repeat the cooking process until all your batter has been used (cook multiple at a time if you have more than one mould)
  14. Heat the crumpets in the oven at 180 degrees celsius for five minutes and then serve with jam and / or vegan butter
