Chocolate Chip Banana Bread

This banana bread is my dessert heaven…it is not too sweet but is rich, comforting and full of chocolate! I am quite literally bananas about my banana bread!


 

Preparation Time: 35 minutes (including baking time)


Ingredients (Serves approx. 6 slices):

  • 1 cup Gluten free rolled oats
  • 3/4 cups Gluten free plain white flour (I like Dove Farm flour)
  • 1/2 cup Potato starch
  • 1/2 cup Melted coconut oil
  • 1 Vanilla pod
  • 3 Large ripe bananas
  • 1 tbsp Apple cider vinegar
  • 1/2 tsp Bicarbonate of Soda
  • 1/2 tsp Baking powder
  • 1/2 tsp Salt
  • 100g Vegan chocolate buttons

Method:

  1. Preheat the oven to 180 degrees celsius
  2. Put the oats in a blender and blend until the oats have formed a fine powdery flour (approx. 5-7 minutes)
  3. Remove the oat flour and set aside in a bowl
  4. Peel the bananas and place them in the blender with the melted coconut oil and vanilla pod chopped roughly and blend until it forms a smooth paste
  5. In a separate bowl mix the bicarbonate of soda, baking powder and apple cider vinegar together until it bubbles
  6. Add the bicarbonate mix to the bananas and blend together for a couple of seconds
  7. Add the oat flour, the plain white flour, potato starch and the salt to the blender and mix well with the bananas until the batter is smooth
  8. Lightly grease a loaf tin and place a paper jacket inside
  9. With a spoon gently mix in 80 grams of the chocolate buttons into the batter
  10. Place the batter into the baking tin and wet one hand so you can push the batter into the corners of the tin without getting the batter sticking to your hands
  11. Using the remaining chocolate buttons, place them on the top surface of the loaf and gently press them down into the loaf
  12. Bake in the oven for 25 minutes or until a toothpick comes out clean
  13. Enjoy warm my Little Peas!
