These biscuits are so crumbly and delicious…and are perfect for the festive run up to Christmas and for little homemade Christmas gifts. I love chai and things like nutmeg, cloves and cinnamon are super warming in this cold weather!
Preparation time: 1 hour 30 minutes (including chilling and baking time)
Ingredients (Makes approx. 9):
Chai blend:
- 1 tbsp Nutmeg
- 1 tbsp Black Pepper
- 1tbsp Cardamom
- 3 tsp Cinnamon
- 1 tsp Cloves
Shortbread:
- 1 1/2 cups Plain White Flour
- 3/4 tsp Chai blend (see above for recipe)
- 3/4 cup Icing Sugar
- 6 tbsp Margarine
- Pinch of Salt
Method:
- Place the margarine and icing sugar into a bowl and using your hands, incorporate the two together until the butter becomes creamy and softer and the sugar is fully mixed in
- Get a spoon and cream(smear the mixture on the sides of the bowl) and mix the sugar-butter mix until light and fluffy
- Mix the flour, chai blend and salt
- Slowly incorporate the flour mix into the butter mix
- Roll the dough into a log shape and spindle the outside with very cold water
- Wrap the log in cling film and place in the fridge for 1 hour
- Preheat the oven to 190 degrees celsius
- Remove the cling film and cut the log into 1.5cm discs and place on grease proof paper 2inches apart
- Bake for 10 minutes, cool on the paper for 5 minutes, then transfer onto a wire rack until completely cooled
