This recipe is super simple to make and is truly delicious! Who said lettuce was only for salads?! The sauce is so creamy and tangy and the grilled lettuce has a great BBQ flavour! This dish is a great salad alternative for a Winter party…and the tahini means that it contains protein so it is nutritious too.
Preparation time: 20 minutes (including cooking time)
Ingredients (Serves 2):
- 4 Baby Gem Lettuce
- 1 or 2 Thai Red Chilli (depending on your spice tolerance)
- 10 Tbsp Sesame Paste (Tahini)
- 2 Tbsp Water
- 1 Lemon (juiced)
- 3 Tbsp Parsley (finely chopped)
- 2 Tbsp Olive Oil
- 1 Pinch of Sea Salt
- Salt to taste
Method:
- Cut the baby gem lettuce in half, length ways and wash them
- Leave the lettuce on paper towels to drain excess water whilst keeping the leaves intact
- In a grinder, grind the chillies, parsley, 4 tbsp Tahini, lemon juice, and salt to taste
- Empty the grinder into a bowl and incorporate the remaining tahini
- The sauce will be very thick and so add the water and mix to make a thin sauce (add extra water if needed)
- Adjust the salt levels in the sauce
- In the same grinder as the olive oil and grind to flavour the oil with the herbs left on the walls of the grinder
- Place the lettuce in a bowl and pour over the oil and mix well
- Heat a griddle pan until smoking and place the lettuce onto it
- After a minute turn the lettuce over and repeat until the outside is charred and softened
- Plate up the lettuce and sprinkle over a pinch of sea salt
- Drizzle over our sauce
