Chargrilled Baby Gem Lettuce in a Spicy Sesame and Lemon Sauce

This recipe is super simple to make and is truly delicious! Who said lettuce was only for salads?! The sauce is so creamy and tangy and the grilled lettuce has a great BBQ flavour! This dish is a great salad alternative for a Winter party…and the tahini means that it contains protein so it is nutritious too.


Preparation time: 20 minutes (including cooking time)


Ingredients (Serves 2):

  • 4 Baby Gem Lettuce
  • 1 or 2 Thai Red Chilli (depending on your spice tolerance)
  • 10 Tbsp Sesame Paste (Tahini)
  • 2 Tbsp Water
  • 1 Lemon (juiced)
  • 3 Tbsp Parsley (finely chopped)
  • 2 Tbsp Olive Oil
  • 1 Pinch of Sea Salt
  • Salt to taste

Method:

  1. Cut the baby gem lettuce in half, length ways and wash them
  2. Leave the lettuce on paper towels to drain excess water whilst keeping the leaves intact
  3. In a grinder, grind the chillies, parsley, 4 tbsp Tahini, lemon juice, and salt to taste
  4. Empty the grinder into a bowl and incorporate the remaining tahini
  5. The sauce will be very thick and so add the water and mix to make a thin sauce (add extra water if needed)
  6. Adjust the salt levels in the sauce
  7. In the same grinder as the olive oil and grind to flavour the oil with the herbs left on the walls of the grinder
  8. Place the lettuce in a bowl and pour over the oil and mix well
  9. Heat a griddle pan until smoking and place the lettuce onto it
  10. After a minute turn the lettuce over and repeat until the outside is charred and softened
  11. Plate up the lettuce and sprinkle over a pinch of sea salt
  12. Drizzle over our sauce
