I am a massive fan of root vegetables and these are definitely my favourite! Whilst eating this dish I went on a journey from Food Heaven to needing a big blanket and a fireplace…it is everything I love about winter! The tahini (sesame paste) gives the sweet vegetables a perfect hit of savouriness and depth of flavour.
Preparation time: 1 hour 20 minutes (including cooking time)
Ingredients (Serves 2):
Dice the vegetables to around 1cm cubes
- 1 cup diced Swede
- 1 cup diced Carrots
- 1 cup chopped Leeks
- 1/2 cup diced White Onion
- 2 Green Chillies (chopped finely)
- 1 cup chopped Parsley
- 2 tbsp Tahini (pure sesame seeds…no added ingredients! I like Sainsbury’s tahini)
- 1 tsp fresh Lemon juiced
- Salt
- 1 tbsp Olive Oil
Method:
- Preheat the oven to 250 degrees celsius
- Mix all the ingredients in a casserole dish and cover the top with foil
- Cook in the oven at 250 degrees celsius covered for 55 minutes
- Pop off the foil and enjoy my Little Peas!
