Parsley and Tahini Roasted Leeks, Swede, Onions and Carrots

I am a massive fan of root vegetables and these are definitely my favourite! Whilst eating this dish I went on a journey from Food Heaven to needing a big blanket and a fireplace…it is everything I love about winter! The tahini (sesame paste) gives the sweet vegetables a perfect hit of savouriness and depth of flavour.


Preparation time: 1 hour 20 minutes (including cooking time)


Ingredients (Serves 2):

Dice the vegetables to around 1cm cubes

  • 1 cup diced Swede
  • 1 cup diced Carrots
  • 1 cup chopped Leeks
  • 1/2 cup diced White Onion
  • 2 Green Chillies (chopped finely)
  • 1 cup chopped Parsley
  • 2 tbsp Tahini (pure sesame seeds…no added ingredients! I like Sainsbury’s tahini)
  • 1 tsp fresh Lemon juiced
  • Salt
  • 1 tbsp Olive Oil

Method:

  1. Preheat the oven to 250 degrees celsius
  2. Mix all the ingredients in a casserole dish and cover the top with foil
  3. Cook in the oven at 250 degrees celsius covered for 55 minutes
  4. Pop off the foil and enjoy my Little Peas!
