These are the perfect mixture of crispy goodness and healthy nutritious food! I could sit and eat them all day…and now there is no reason for us vegans to miss out of delicious goujons. Finish these babies with a squeeze of lemon and I promise you will be very satisfied!
Preparation time: 45 minutes (including cooking time)
Ingredients (Serves 1):
- 1 Large Aubergine
- 1 tsp Salt
- 1 cup Parsley (finely chopped)
- 12 tbsp Gram Flour (available at most supermarkets, but for bulk I like to buy it from Indian supermarkets)
- 1/4 cup + 2 tbsp Water (room temperature)
- 1 tbsp Olive Oil
- 1/4 tsp Black Pepper
- 1 Garlic Clove
- 1 Red Chilli
Method:
- Preheat an oven to 200 degrees celsius
- Slice the aubergine (skin on) into index finger sized batons
- Place the garlic clove, chilli, olive oil and half the parsley into a blender and roughly mince
- In a large mixing bowl, add the gram flour with the salt, remaining parsley, the black pepper and the minced mixture from step 3
- Mix the gram flour by hand
- Add the water to the mixture and mix with a spoon to form a batter
- Place the aubergine batons in the batter and mix thoroughly by hand until all the batons are well coated
- Place the individual batons (separated) onto a silicone sheet / tray (or use grease proof paper)
- Bake the goujons for 30 minutes
- Serve with a sprinkling of sea salt and a wedge of lemon

These look to die for! Aubergines are one of my favorite fall vegetables ever! Never would have thought of cooking them this way!
