Preparation time: 45 minutes (including cooking time)

Ingredients (Serves 1):

  • 1 Large Aubergine
  • 1 tsp Salt
  • 1 cup Parsley (finely chopped)
  • 12 tbsp Gram Flour (available at most supermarkets, but for bulk I like to buy it from Indian supermarkets)
  • 1/4 cup + 2 tbsp Water (room temperature)
  • 1 tbsp Olive Oil
  • 1/4 tsp Black Pepper
  • 1 Garlic Clove
  • 1 Red Chilli

Method:

  1. Preheat an oven to 200 degrees celsius
  2. Slice the aubergine (skin on) into index finger sized batons
  3. Place the garlic clove, chilli, olive oil and half the parsley into a blender and roughly mince
  4. In a large mixing bowl, add the gram flour with the salt, remaining parsley, the black pepper and the minced mixture from step 3
  5. Mix the gram flour by hand
  6. Add the water to the mixture and mix with a spoon to form a batter
  7. Place the aubergine batons in the batter and mix thoroughly by hand until all the batons are well coated
  8. Place the individual batons (separated) onto a silicone sheet / tray (or use grease proof paper)
  9. Bake the goujons for 30 minutes
  10. Serve with a sprinkling of sea salt and a wedge of lemon
  11. Enjoy my Little Peas!
